Fig, Blue Cheese Crumble, Prosciutto Ciabatta Sandwich

Ingredients

  • 1/2 lb. Dietz & Watson Prosciutto, Sliced Thin
  • 1/2 lb. Dietz & Watson Crumbled Blue Cheese
  • 8 Figs, Sliced
  • 2 Hoagie Rolls
  • 1/2 stick Butter, softened
  • 1/2 cup Arugula leaves
  • 1 TBSP Extra-virgin olive oil for dressing
  • 2 TSP Red wine vinegar for dressing
  • 1/2 TSP Shallots, thinly sliced for dressing
  • 1/4 TSP Sea Salt for dressing
  • 1/8 TSP Freshly ground black pepper for dressing

Directions

  1. 1 Cut Ciabatta roll in half. Butter both sides and toast
  2. 2 In a bowl mix the dressing ingredients together
  3. 3 Mix in the arugula with a squirt of dressing
  4. 4 To build, place the ¼ cup of the dressed arugula on the bottom of the bun
  5. 5 Place 4oz of the Prosciutto on the arugula. Top with Fig slices and 2 oz. of crumbled Blue Cheese
  6. 6 Cover with top of bun
