Ingredients

  • Panna Cotta:
  • 4 1/2 OZ Goat Cheese
  • 1 CUP Sugar
  • 5 CUPS Heavy Cream
  • 1 Vanilla Bean
  • 4 Gelatin Sheets
  • SHORTBREAD COOKIE:
  • 2 CUPS All-Purpose Flour
  • 3/4 TS Salt
  • 1/2 CUP Confections’ Sugar
  • 1 TS Vanilla Extract
  • 8 OZ Butter
  • GARNISH:
  • 1 CUPS Roasted Pistachios
  • 1/4 CUP Strawberries
  • 1 LB Sugar

Directions

  1. 1 FOR GOAT CHEESE PANNA COTTA: If using gelatin sheets, bloom in ice water. If using gelatin packets, bloom in cold water.
  2. 2 In a heavy-bottomed sauce pot, bring cream to a boil and then turn off. Add in Dietz & Watson Originals Goat Cheese, sugar, heavy cream, and vanilla bean. Stir in gelatin. Pour into presentation molds and let set.
  3. 3 FOR SHORTBREAD COOKIE: Using a mixer, cream the butter and sugar. Stir in salt and vanilla. Add flour until just mixed.
  4. 4 Transfer dough to a flat, floured surface and roll into a ¼” thick sheet. Refrigerate for 20 mins. Take out, cut into triangles and bake for 15 minutes at 350°F.
  5. 5 Roast pistachios. Quarter the strawberries and add 1 tbsp. of sugar on top, letting them macerate for 15 mins.
